Today I’ve started a personal project I’ve been thinking about for a while.

I’m going to cook the national dish (or as close to it) from every country in the world!

I’m #cooking193 🤓

Those who know me know I am NOT a cook or chef. My husband Nick does 95% of the cooking in our family, and he’s the sort to do his own thing with a dish, while I obsessively read a recipe about 100 times while I cook so I don’t stuff it up 😆

So this is a way to challenge myself, while making something different that we can both enjoy!

Today, we begin with the national dish of Afghanistan – Kabuli Palau.

I used a recipe from @humairaghilzai, who has a wonderful blog full of Afghani recipes.

 

 

This was delicious! It had 2 ingredients I don’t usually love – raisins & carrots – but in this dish, they are lovely.

The carrot- based topping gives moisture and sweetness to the dish, and we both enjoyed it immensely!

 

 

I’m planning on making a new dish pretty much every week, and I’ll be sharing them here.
